Dried tomatoes
Dried tomatoes, or what is known as sun-dried tomatoes, are ripe tomatoes that lose most of their water content, after spending a long period of time drying them in the sun.[1] They are usually pre-treated with sulfur dioxide or salt before being placed in the sun, in order to improve their quality. Usually, the tomato fruits are kept for 4 or even 10 days in the sun until the drying process is complete. Cherry tomatoes lose 88% of their initial (fresh) weight, while large fruits lose up to 93% in the process. That is why it takes 8 and sometimes even 14 kilograms of fresh tomatoes to produce one kilogram of sun-dried tomatoes.
